Restaurant & Hotel Management

Course Outline

(28 week program)

Students will learn several areas of the restaurant and hotel industry.  Each course is designed to introduce students to the hospitality industry.  Graduates have found work locally and abroad in restuarants and hotels as managers, supervisors and other key positions.

Hospitality Today
This course takes a management perspective into the organization and structure of hotels, restaurants, clubs, cruise ships, and casino hotels. Topics covered include; business ethics, franchising, management contracts, and areas of management responsibility such as human resources, marketing and sales, and advertising.

Managing Front Office Operations
This course presents a systematic approach to front office procedures by detailing the flow of business through a hotel, from the reservations to check-out. The course also examines effective front office management, paying particular attention to planning and evaluation of front office operations and human resource management.

Managing Technology in the Hospitality Industry
Provides an overview of the information needs of lodging properties and food service establishments; addresses essential aspects of computer systems, such as hardware, software, and generic applications; focuses on computer-based property management systems.

Food & Beverage Management
Provides a basis for understanding the various challenges and responsibilities involved in managing a food and beverage operation.

Supervision in the Hospitality Industry
This course is designed to provide students with the principles of supervision as they apply specifically to the hospitality industry. Students will be prepared to juggle the expectations of managers, guests, employees, and governmental agencies. New case studies help students practice solving problems they will face on the job.

Hospitality Industry Financial Accounting
This course presents basic financial accounting concepts and explains how they apply to the hospitality industry.

Tourism & the Hospitality Industry
The social science perspective provides students with the kind of practical knowledge that can effectively be applied to the hospitality industry.

Leadership & Management
There are chapters on continuous improvement, quality service, power and empowerment, goal setting, communication skills, diversity, high-performance teams, managing organizational change, and strategic career planning.

International Hotel Management
This course prepares students to plan, develop, market, and manage hotels in the international arena. It gives a solid foundation for under-standing and managing cultural diversity in the workplace, and underscores the importance of protocol in international interactions.

Managing Housekeeping Operations
Presents a systematic approach to managing housekeeping in the hospitality industry.

Security & Loss Prevention Management
Explains the issues surrounding the need for individualized security programs, examines a wide variety of security, procedures, and safety equipment, guest protection and internal security for asset protection, explores risk management and loss prevention, and outlines lodging property regulations.

International Human Resource Management in the Hospitality Industry
Addresses human resource issues from the unique perspectives of twenty countries that have a major hospitality industry presence. From China to the United States, the text examines cultural differences that affect the workplace, societal work values, labor market issues, and the legal environment in each country as it relates to the hospitality industry.

Hospitality Facilities Management & Design
Students learn what it takes to keep every area of a hotel property running smoothly, with an expanded emphasis on food service equipment and design, as well as how hotel operations are affected by the United Nations' environmental guidelines.

Hospitality Sales & Marketing
Focus on a practical approach for effectively marketing hotels and restaurants. Also covered are “Insider Insights” from sales and marketing professionals and “Marketing in Action” sidebars that show how concepts presented in the text are being applied in the industry today.
