A tourism and hospitality professional is responsible for overseeing the operations of a hotel or hospitality establishment, ensuring excellent customer service, and managing various aspects such as guest services, staff management, reservations and revenue management, event coordination, and compliance with health and safety regulations. They strive to create a positive and memorable guest experience, handle guest inquiries and concerns, manage the establishment’s budget and financial performance, and foster effective communication and collaboration among staff and external stakeholders. Their role is crucial in maintaining the smooth functioning of the establishment and delivering exceptional hospitality services.

What You Will Learn 

Students who complete the Tourism and Hospitality Management Diploma will learn to: 

  • Describe the hotel and hospitality industry, including its history, current trends, and future developments.
  • Demonstrate excellent customer service skills in the hotel and hospitality sector by anticipating guest needs, and handling various customer service situations effectively.
  • Demonstrate competence with front office operations, such as reservations management, guest check-in and check-out procedures, handling inquiries and complaints, managing room inventory, and utilizing property management systems.
  • Describe key concepts in menu planning, food safety and sanitation, bar operations, restaurant service, and catering.
  • Demonstrate financial management principles including revenue management, budgeting, cost control, and financial analysis.
  • Apply leadership and teamwork for supervisory and management roles such as how to lead and motivate teams, resolve conflicts, and collaborate effectively.
  • Analyze responsible tourism, environmental sustainability, and ethical considerations in hotel operations.

Topics of Study

Accounting - 60 Hours

This course introduces students to basic accounting principles, concepts, and standards used within the hospitality and tourism industry. Students will become familiar with financial statements and financial reports. This course introduces students to the importance of budgeting and revenue management, along with the importance of financial integrity.

 

Business Communication - 60 hours

Communication remains an essential skill sought by employers, regardless of discipline or field of study. Using a practical approach, students develop strong oral, written, body language and presentation skills to become effective business communicators. Learners will continue to strengthen professional writing, speaking, reading, listening skills, as well as using technology to communicate professionally in a business context. In addition, learners will use communication technology tools to support operations in the workplace.

Career Preparation - 40 hours

This course provides students with an overview of searching for employment opportunities, creating professional and targeted resumes and cover letters, and preparing for an interview. Students will learn about job hunting online, the application process for job aggregators, and discover the potential benefits of networking to help secure a job in their field.

Event Management - 80 Hours

This course introduces students to the topic of event management. Students will develop the skills to apply the fundamental principles of event management and to manage events. Topics will include event planning, event logistics, financial management, program development, and event sponsorship.

 

Food and Beverage Service Management - 80 Hours

This course introduces students to effective food and beverage service management. Students will develop the skills to provide high-quality food and beverage service. They will develop an understanding of menu planning and food promotion along with standard order and billing practices. This course will highlight the health and safety regulations specific to the food and beverage industry.

Front Office Management - 60 hours

This course provides an overview of front-office management roles and responsibilities. Students will become familiar with hotel operations, security and safety measures, guest service, and customer processes. This course provides a foundation for effective front-office management.

Hospitality Regulation and Legislation- 40 hours

This course introduces students to the legal and regulatory frameworks that govern the hospitality sector. Students will explore employment, food and alcohol, health and safety, consumer protection, and environmental regulations and practices. Strategies to manage compliance with regulatory requirements and laws will be a focus of this course.

Housekeeping Management - 40 hours

This course provides an overview of housekeeping management roles and responsibilities. Students will become familiar with back-of-house operations related to housekeeping including laundry management, inventory, pest-control, and health and safety regulations. This course introduces the student quality housekeeping management practices.

Human Resources Management - 60 hours

This course introduces students to human resource management within the hospitality and tourism sector. Students will develop the skills to facilitate all areas of human resource management including recruitment, employee training, performance management and employee engagement. This course will introduce students to compensation and benefits in both a unionized and non-unionized environment.

Introduction to Hospitality and Tourism Management - 40 Hours

This course introduces students to the hospitality and tourism sector. Students will explore the interrelationships between sectors and develop an understanding of the different types of hospitality and tourism industries. The course will introduce students to the historical development of the hospitality sector in Canada. Students will explore trends and issues within the sector.

Marketing & Sales - 80 Hours

This course introduces students to the concepts of marketing and sales. Students will learn the basic concepts of market analysis, market research, branding, and promotions. Sales will be discussed as a pivotal part of the marketing experience.

MS Office Applications - 80 Hours

This course will prepare students to perform functions common to all Microsoft Windows applications. Elements include the ability to create and manipulate Word, Excel, or PowerPoint applications, modify the display of toolbars and other on-screen elements, use online help, and perform file management, editing, formatting and printing functions common to most Windows applications.

Practicum or Practical Project - 160 hours

The Practicum experience is an integrated work and learning experience. Students are expected to complete a minimum of 160 hours of practical experience in the hospitality and tourism sector. The course is designed to help students integrate academic learning with the realities of the work environment.
